Preheat your oven to 200°C (390°F) and place a baking sheet on the middle rack to heat.

Butter the inside of four ramekins (about 7-8 cm in diameter) and dust lightly with granulated sugar. Set aside.

Peel the bananas and mash them in a bowl until smooth. Add the vanilla extract and lemon juice and mix until combined.

Separate the egg yolks from the whites. Place the yolks in one bowl and the whites in another clean, dry bowl.

Add the mashed bananas and flour to the egg yolks and whisk until smooth.
