📝 Instructions

9 steps
1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil.

2

Scrub the potatoes thoroughly under cold water and pat them dry. Pierce each potato a few times with a fork to allow steam to escape during baking.

3

Place the potatoes directly on the oven rack or on the prepared baking sheet. Bake for 45-50 minutes, or until the potatoes are tender and the skin is crisp.

4

Remove the potatoes from the oven and let them cool for about 10 minutes, just enough to handle safely.

5

Cut each potato in half lengthwise and scoop out the flesh, leaving about 1/4-inch of potato attached to the skin. (Set aside the scooped potato for another use, like mashed potatoes.)

6

Brush the inside and outside of each potato skin with olive oil. Sprinkle the insides lightly with salt and black pepper.

7

Place the potato skins cut-side down on the baking sheet and bake for 8-10 minutes to crisp up the edges.

8

Flip the skins over, cut-side up, and fill each with shredded cheddar cheese and crumbled bacon. Return them to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.

9

Remove the potato skins from the oven and sprinkle them with sliced green onions. Serve hot with sour cream on the side for dipping.
