📝 Instructions

12 steps
1

Wash and peel the potatoes, then cut them into small cubes.

2

Finely chop the onion, tomatoes, and ginger. Slit the green chili lengthwise.

3

Heat oil in a pan over medium heat. Once the oil is hot, add cumin seeds and let them splutter.

4

Add the chopped onions and sauté until they turn golden brown.

5

Add the ginger and green chili. Sauté for another 1-2 minutes until the raw aroma of ginger disappears.

6

Add turmeric powder, coriander powder, and red chili powder. Mix well and cook for 30 seconds.

7

Add the chopped tomatoes and cook until they become soft and the oil starts to separate from the mixture.

8

Add the cubed potatoes to the pan and mix well with the masala.

9

Add salt and water. Stir everything well, cover the pan with a lid, and cook on low heat for about 15-20 minutes, or until the potatoes are cooked through.

10

Check occasionally and stir to prevent the potatoes from sticking to the bottom of the pan. If needed, add a little more water.

11

Once the potatoes are cooked, add garam masala and mix well.

12

Garnish with freshly chopped coriander leaves and serve hot with roti, puri, or rice.
