Wash and finely chop the zucchini, onions, red bell pepper, and green bell pepper. Alternatively, use a food processor to chop them into small, even pieces.

In a large mixing bowl, combine the chopped vegetables and sprinkle the salt evenly over them. Mix well and let the mixture sit for 2 hours to draw out excess moisture.

After 2 hours, transfer the mixture to a fine-mesh sieve or cheesecloth and rinse thoroughly under cold water to remove the salt. Squeeze out as much excess liquid as possible and set the vegetables aside.
