📝 Instructions

9 steps
1

Soak the rice noodles in a bowl of warm water for about 10-15 minutes, or until softened. Drain and set aside.

2

In a small bowl, whisk together soy sauce, tamarind paste, fish sauce, brown sugar, Sriracha (if using), and water to make the sauce. Set aside.

3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and fully cooked. Remove from pan and set aside.

4

In the same skillet, add another tablespoon of oil. Crack the eggs into the skillet and quickly scramble them until just set. Push the eggs to the side of the pan.

5

Add the remaining tablespoon of oil along with minced garlic. Sauté for 30 seconds until fragrant.

6

Add the soaked rice noodles to the skillet and pour the prepared sauce over the noodles. Toss to coat the noodles evenly with the sauce.

7

Add the cooked shrimp back to the skillet, along with bean sprouts and half of the chopped peanuts. Toss everything together and cook for another 2 minutes.

8

Remove the skillet from heat and transfer the Pad Thai to serving plates.

9

Garnish with sliced green onions, the remaining chopped peanuts, and lime wedges. Serve immediately and enjoy your Yummy Shrimp Pad Thai!
