Preheat your oven to 180Β°C (350Β°F) and line a 8x8-inch baking dish with parchment paper, leaving some overhang to easily lift the bars out later.
In a large mixing bowl, combine the rolled oats, chopped almonds, pumpkin seeds, shredded coconut, and dried cranberries.
In a small saucepan, add the honey, almond butter, brown sugar, and vanilla extract. Heat over low-medium heat, stirring continuously until the mixture is smooth and melted together. Do not let it boil.
Pour the warm mixture over the dry ingredients in the bowl. Mix everything together until all the dry ingredients are well coated.
If desired, fold in the dark chocolate chips once the mixture has slightly cooled to avoid melting them completely.
Transfer the mixture into the prepared baking dish, pressing it firmly into an even layer with a spatula or the back of a spoon.
Bake in the preheated oven for 10 minutes, or until slightly golden around the edges.
Remove from the oven and let it cool completely in the baking dish before carefully lifting it out using the parchment paper overhang.
Once fully cooled, slice into 12 bars or your desired size. Store the muesli bars in an airtight container at room temperature for up to 1 week or refrigerate for longer freshness.
