Press the tofu to remove excess moisture and cut it into thin rectangular strips for rolling.
In a bowl, mix the all-purpose flour, cornstarch, 1 tsp salt, turmeric, garam masala, and crushed cloves. Add water gradually to form a thick, smooth batter.
Coat each tofu strip evenly in the batter and roll them to form roll shapes (similar to spring rolls). Secure if needed with toothpicks.
Heat oil in a deep frying pan on medium heat. Fry the tofu rolls until golden and crispy, then drain on paper towels.
In a separate large saucepan, heat 1 tbsp of oil over medium heat. Add cumin seeds and let them splutter.
Add the minced garlic and ginger, sautéing for a minute until fragrant.
Stir in the pureed tomatoes. Add Kashmiri red chili powder, sugar, and 1 tsp salt, stirring well. Let the sauce simmer for 10-15 minutes until thickened.
