Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.

In a medium bowl, mix the plain Greek yoghurt, honey, and vanilla extract until well combined. Set aside.

Chop the pineapple chunks into small pieces if they aren't already bite-sized. Drain any excess juice if using canned pineapple.

Unroll the croissant dough and separate it into individual triangles along the perforated lines.
