📝 Instructions

9 steps
1

Trim any excess fat or silver skin from the pork tenderloin, then pat dry with paper towels.

2

In a small bowl, mix together paprika, garlic powder, onion powder, salt, and black pepper. Rub this spice mixture evenly over the pork tenderloin.

3

Heat olive oil in a large, heavy-bottomed skillet or Dutch oven over medium-high heat. Sear the pork tenderloin for 2-3 minutes per side until browned. Remove and set aside.

4

In the same skillet, pour in the chicken stock, apple cider vinegar, BBQ sauce, and brown sugar. Stir to combine and scrape up any browned bits from the bottom of the pan.

5

Return the pork tenderloin to the skillet and reduce the heat to low. Cover with a tight-fitting lid and simmer for 2.5-3 hours, flipping the pork halfway through cooking. The pork should be very tender and easily pull apart with a fork.

6

Once the pork is cooked, transfer it to a cutting board. Use two forks to shred the meat into bite-sized pieces.

7

Add the shredded pork back to the skillet with the sauce. Stir to fully coat the pork in the sauce and let it heat through for another 5-10 minutes over low heat.

8

Toast the sandwich buns if desired. Pile the saucy pulled pork onto each bun and top with coleslaw if using.

9

Serve hot and enjoy your Yankee Cheater Pulled Pork!
