Preheat the oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
Chop the onion and mince the garlic cloves.
Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 5 minutes.
Add the ground turkey to the skillet and cook until browned, breaking it up with a spoon. This should take about 6-7 minutes.
