Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Place the chicken breasts in a pot of boiling water. Reduce the heat to a simmer and cook for 15-20 minutes, or until the chicken is fully cooked through and shreds easily. Once cooked, remove from the water and let cool slightly before shredding with two forks.
