Indulge in the nostalgic warmth of our Whole30 Classic Baked Apples, a refined sugar-free dessert that's both wholesome and satisfying. This guilt-free treat celebrates the natural sweetness of baked apples, filled with a delightful medley of chopped walnuts, raisins, and unsweetened shredded coconut, all beautifully spiced with cinnamon and nutmeg. A touch of zesty lemon juice and rich ghee elevates the flavor while keeping it Whole30-compliant. Ready in under an hour with minimal prep, these baked apples are perfect for cozy evenings or a healthy holiday dessert. Serve them warm for the ultimate comforting experience!
Preheat your oven to 350°F (175°C).
Rinse and dry the apples. Using a paring knife or apple corer, core each apple, removing the stems and seeds. Be careful not to cut through the bottom of the apple.
In a small mixing bowl, combine the chopped walnuts, raisins, shredded coconut, ground cinnamon, and ground nutmeg.
Stuff each apple with the walnut-raisin mixture, pressing it down gently until full.
Place the stuffed apples in a baking dish, ensuring they are sitting upright.
Drizzle the lemon juice evenly over the top of the apples.
Dot each apple with a small amount of ghee, placing it on the top of the stuffing in each apple.
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
Remove the foil and continue baking for an additional 15 minutes, or until the apples are tender and the stuffing is golden brown.
Remove from the oven and let cool for a few minutes before serving. Enjoy your Whole30 Classic Baked Apples warm.
