📝 Instructions

12 steps
1

First, prepare the ingredients: Finely chop the onion and garlic. Dice the green bell pepper and carrot. Cut the chicken breast into small, bite-sized pieces.

2

Heat 1 tablespoon of coconut oil in a large skillet over medium heat. Add the chicken pieces and cook until they are no longer pink, about 5-7 minutes.

3

Once the chicken is cooked, remove it from the skillet and set it aside.

4

Using the same skillet, add the remaining tablespoon of coconut oil. Sauté the onion and garlic until fragrant and the onion is translucent, about 3 minutes.

5

Add the diced bell pepper and carrot to the skillet. Cook for another 4-5 minutes until the vegetables have softened.

6

Return the chicken to the skillet. Stir in the coconut aminos, ensuring all the chicken and vegetables are coated. Season with salt and black pepper.

7

Continue cooking the mixture for another 3-4 minutes, allowing the flavors to meld together.

8

While the chicken mixture is cooking, prepare the cauliflower rice. You can either microwave it according to package instructions or sauté it in a separate skillet with a little coconut oil until tender.

9

To assemble the pastil, take a banana leaf and place a scoop of cauliflower rice in the center. Follow with a scoop of the chicken mixture on top of the rice.

10

Fold the banana leaf over the filling, securing it by tying with a kitchen string or simply folding tightly.

11

Repeat the assembly process for the remaining servings.

12

Serve the Chicken Pastil warm. If banana leaves are unavailable, serve directly on a plate.
