Peel and slice the eggplant into 1/2-inch thick rounds. Place them on the baking sheet, brush with 1 tablespoon of olive oil, and season lightly with salt and pepper.
Roast the eggplant slices for about 20 minutes until tender and golden brown, flipping halfway through.
