Place the white chocolate in a heatproof bowl and melt it gently over a double boiler or in the microwave in 20-second increments, stirring each time until smooth. Set aside to cool slightly.

In a small bowl, mix the gelatin powder with cold water and let it bloom for 5 minutes.

In a small saucepan, heat 100 ml of heavy cream over medium heat until warm (do not bring it to a boil). Remove from heat and stir in the bloomed gelatin until dissolved. Let this mixture cool slightly.
