Preheat your oven to 300Β°F (150Β°C).
Lightly grease a 12-cup muffin tin with olive oil.

Grate the cheddar and Monterey Jack cheese and add it to the egg mixture. Use a spatula to gently fold in the cheese.
Wash and roughly chop the fresh spinach, then fold it into the egg-cheese mixture.
Dice the red bell pepper into small pieces and evenly distribute them into the bottom of each muffin tin cup.
Pour the egg mixture over the diced red peppers, filling each muffin tin cup about three-quarters full.
Place the muffin tin in the preheated oven and bake for 25-30 minutes, or until the egg bites are set and slightly golden on top.
Remove from the oven and let them cool for a few minutes before using a small spatula or butter knife to gently release the egg bites from the tin.
Serve warm and enjoy your homemade vegetarian egg bites!
