Finely chop the plant-based chicken strips into small pieces. Grate the cabbage and carrot. Thinly slice the spring onions. Mince the garlic and ginger.
In a bowl, combine the chopped plant-based chicken, cabbage, carrot, spring onions, garlic, and ginger. Add soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
Take one wonton wrapper and place a teaspoon of filling in the center. Dip your finger in water and wet the edges of the wrapper.
