Preheat the oven to 200°C (400°F).
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 3 minutes.
Add the carrot and celery to the skillet and cook for an additional 3 minutes, stirring occasionally.
Stir in the mushrooms and cook until they have released their moisture and begin to brown, about 5 minutes.
Add the vegetarian ground beef substitute to the skillet. Cook and stir for 5 minutes, ensuring it combines well with the vegetables.
Mix in the tomato paste, soy sauce, Worcestershire sauce, dried thyme, salt, and black pepper. Cook for another 3 minutes, allowing the flavors to meld. Remove from heat and let it cool slightly.
