Wash and peel the snake gourd. Cut it lengthwise, remove the seeds and slice it into thin half-moons.
Heat coconut oil in a large pan over medium heat.
Add mustard seeds and let them splutter. Then add cumin seeds, urad dal, and chana dal. Stir until they turn golden brown.
Add slit green chilies and curry leaves. Sauté for a few seconds until the aroma is released.
Add the sliced snake gourd to the pan and stir well.
Sprinkle turmeric powder and salt over the snake gourd. Mix thoroughly.
Cover the pan with a lid and let cook on low heat for about 10 minutes, stirring occasionally.
Once the snake gourd is soft and cooked through, add the grated coconut and stir well.
Cook for an additional 2-3 minutes until the coconut is well incorporated.
Turn off the heat and add lemon juice. Mix gently.
Garnish with chopped cilantro leaves before serving.
Serve hot with rice or any Indian bread of your choice.
