Finely chop the shiitake mushrooms. Peel and mince the garlic and ginger. Thinly slice the green onions.

In a medium mixing bowl, combine the vegan ground meat, chopped mushrooms, soy sauce, sesame oil, minced garlic, minced ginger, sliced green onions, salt, and black pepper. Mix thoroughly to combine all the ingredients.
