In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for 5 minutes, until translucent.
Add the minced garlic and cook for an additional 2 minutes, stirring frequently.
Increase the heat to medium-high and add the vegan ground meat to the skillet. Cook for about 5 minutes, breaking it up with a spoon, until it starts to brown.
Stir in the tomato paste, vegetable broth, paprika, cumin, salt, and pepper. Reduce the heat to low and simmer for 10 minutes, allowing the flavors to blend.
Remove the skillet from heat and let the filling cool slightly.
