📝 Instructions

12 steps
1

Begin by preparing the dough. In a large bowl, combine the all-purpose flour and salt. Make a well in the center and gradually add 2 tablespoons of olive oil and warm water, mixing until a soft dough forms.

2

Knead the dough on a lightly floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.

3

While the dough rests, prepare the filling. Finely chop the onion and garlic cloves. Slice the mushrooms thinly.

4

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onions and sauté for about 2-3 minutes until translucent.

5

Add the garlic and mushrooms to the skillet and continue to sauté for another 5 minutes until the mushrooms are soft and cooked through.

6

Stir in the fresh spinach and cook for 1-2 minutes until wilted. Remove from heat and let it cool slightly.

7

In a mixing bowl, combine the cooked spinach and mushroom mixture with grated vegan cheese, black pepper, dried oregano, and lemon juice. Mix well.

8

Divide the rested dough into four equal pieces. Roll each piece into a thin, large circle about 8-10 inches in diameter on a floured surface.

9

Place a quarter of the filling onto one half of each dough circle, leaving a small border around the edge.

10

Fold the dough over the filling to create a half-moon shape. Press the edges together to seal.

11

Heat a non-stick pan or a griddle over medium heat. Cook each gozleme for about 3-4 minutes on each side, until they are golden brown and crispy.

12

Once cooked, remove from the heat, let it cool for a minute, then cut into slices. Serve warm and enjoy!
