📝 Instructions

10 steps
1

In a large bowl, mix the flour and salt together. Add cold, diced vegan butter into the flour and use your fingers to rub the butter into the flour until it resembles coarse crumbs.

2

Slowly add cold water to the flour mixture little by little, stirring gently with a spoon, until the dough just comes together without being sticky. You may not need all the water.

3

Turn the dough onto a lightly floured surface and gently shape it into a disc. Wrap it in plastic wrap and refrigerate for at least 30 minutes to chill.

4

Meanwhile, prepare the filling. Heat olive oil in a pan over medium heat. Add minced garlic and chopped onion, cooking until they are soft and translucent.

5

Stir in your vegan filling of choice (such as spinach and mushrooms) and cook until wilted or tender. Season with black pepper and salt to taste. Remove from heat and let cool.

6

Preheat your oven to 400°F (200°C). Lightly flour your surface and roll out the chilled dough into a rectangle about 1/8 inch thick.

7

Spread the cooled filling evenly over the rolled-out pastry, leaving about a one-inch border around the edges.

8

Starting from one of the longer edges, carefully roll the pastry into a tight log. Pinch the seam and ends to seal.

9

Place the pastry log seam-side down on a baking sheet lined with parchment paper. Use a sharp knife to score slashes on top for steam to escape.

10

Bake in the preheated oven for 25 minutes, or until golden brown and flaky. Allow to cool slightly on a wire rack before slicing into servings. Serve warm.
