Boil the potatoes with their skins on until tender. Once cooked, peel and mash them. Set aside.
Finely chop the onion, garlic, ginger, and cilantro.
In a pan, heat 2 tablespoons of vegetable oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
Add the chopped onions, garlic, and ginger. Sauté until the onions are translucent.
Stir in the coriander powder, garam masala, turmeric powder, and red chili powder.
Add the mashed potatoes, peas, salt, and a quarter cup of water. Cook for about 5 minutes, stirring occasionally.
Mix in the chopped cilantro and turn off the heat. Let the filling cool completely.
Preheat the oven to 375°F (190°C).
Melt the vegan butter or margarine and set aside.
