In a small bowl, combine chia seeds and water to make a chia egg, let it sit for 5 minutes until it forms a gel-like consistency.
In a saucepan over low heat, warm the almond milk until lukewarm. Do not overheat.
In the bowl of a stand mixer, combine the warmed almond milk, active dry yeast, and coconut sugar. Let it sit for 10 minutes until it becomes frothy.
