Preheat your oven to 160Β°C (320Β°F).

To make the caramel, combine the granulated sugar and water in a medium saucepan over medium heat. Stir gently until the sugar dissolves, then stop stirring and let the mixture simmer until it turns a deep amber color, about 8–10 minutes.

Carefully pour the hot caramel into a 9-inch (23 cm) round baking dish, tilting it to ensure the bottom is evenly coated. Set aside to cool and harden.

In a large mixing bowl, whisk together the sweetened condensed milk, evaporated milk, and whole milk until fully combined.

In a separate bowl, lightly beat the eggs, then slowly whisk them into the milk mixture.

Add the vanilla extract, instant coffee granules, and salt to the mixture. Whisk until the coffee granules dissolve and the mixture is smooth.

Place the baking dish in a large roasting pan. Add hot water to the roasting pan until it reaches halfway up the sides of the baking dish, creating a water bath.

Bake the flan in the preheated oven for 55–60 minutes, or until the center is just set and a knife inserted comes out clean.

Remove the baking dish from the water bath and let it cool at room temperature for 30 minutes. Then, refrigerate for at least 4–6 hours or overnight for best results.

To serve, run a knife around the edges of the flan to loosen it. Place a large serving plate or platter over the baking dish and quickly invert it. Tap gently to release the flan, letting the caramel sauce drizzle over the top.
