Boil the potatoes until tender. Once done, peel and mash them.
In a blender, add green chilies and garlic. Blend to a coarse paste.
Heat 2 tablespoons of oil in a pan. Add mustard seeds, cumin seeds and let them splutter.
Add the blended chili-garlic paste, curry leaves, and asafoetida. Sauté for 2 minutes.
Add turmeric powder, mashed potatoes, 1 teaspoon of salt, and coriander leaves. Mix well.
Cook the mixture for 5 minutes and then let it cool down. Shape the potato mixture into 6 golf-sized balls.
In a mixing bowl, combine gram flour, 0.5 teaspoon salt, red chili powder, and water to make a smooth batter.
Heat the remaining oil in a deep pan over medium heat.
Dip each potato ball into the gram flour batter, ensuring it is completely coated.
Carefully deep-fry each coated potato ball until golden brown. Remove and drain on a paper towel.
Slice each pav bun into half and spread butter on the inner sides.
