Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.

Rinse the quinoa under cold water using a fine mesh sieve. In a small saucepan, combine the quinoa and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes until the quinoa is cooked and water has been absorbed. Remove from heat and let cool slightly.

In a large mixing bowl, combine the ground turkey, cooked quinoa, beaten egg, tomato paste, Worcestershire sauce, chopped parsley, Italian seasoning, cooked onions and garlic, salt, and black pepper. Mix until well combined, but do not overmix.

Transfer the turkey mixture into the prepared loaf pan, pressing it down gently to shape it into a loaf.

In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar. Spread this glaze evenly over the top of the meatloaf.

Bake in the preheated oven for 40–50 minutes, or until the internal temperature of the meatloaf reaches 165°F (74°C).
