  • 30 g Unsalted butter
  • 2 tbsp Granulated sugar
  • 1 tbsp Balsamic vinegar
  • 1 tbsp Fresh thyme
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 sheets Puff pastry sheet
  • 1 tbsp All-purpose flour (for dusting)

Preheat your oven to 200°C (400°F).

Wash the cherry tomatoes and pat them dry with a clean kitchen towel.

In a 9-inch (23 cm) ovenproof skillet or tarte tatin pan, melt the butter over medium heat.

Add the sugar to the melted butter and stir gently until it dissolves and begins to caramelize, about 2–3 minutes.

Stir in the balsamic vinegar and sprinkle the thyme leaves over the caramel.

Arrange the cherry tomatoes snugly in a single layer in the pan, cut side up if cut in half. Sprinkle with salt and black pepper to season.

Let the tomatoes cook in the caramel for 7–8 minutes on medium heat. Remove the skillet from the heat and set aside.

On a lightly floured surface, roll out the puff pastry sheet to slightly larger than the skillet diameter. Trim to create a neat circle, if necessary.

Carefully lay the puff pastry over the tomatoes, tucking the edges into the skillet around the tomatoes.

Use a fork to poke a few small holes in the pastry to allow steam to escape.

Place the skillet in the preheated oven and bake for 20–25 minutes, or until the puff pastry is golden and crisp.

Remove the skillet from the oven and let the tarte tatin cool for 5 minutes. Carefully run a knife around the edges to loosen the pastry.

Place a large serving plate upside down over the skillet, then quickly but carefully flip the skillet and plate to invert the tarte tatin onto the plate.

Serve warm or at room temperature, garnished with additional thyme if desired.
