Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Rinse the cherry tomatoes and mushrooms. Pat them dry with a clean kitchen towel.
Remove the stems from the mushrooms and set the caps aside. Finely chop the mushroom stems.
Peel and mince the garlic cloves.
In a medium skillet, heat 1 tablespoon of olive oil over medium heat.
Add the minced garlic and chopped mushroom stems to the skillet. Sauté for 2-3 minutes until fragrant and the stems are softened.
Remove the skillet from heat and stir in the dried oregano, dried basil, salt, black pepper, and grated Parmesan cheese.
Using a small spoon, carefully stuff each mushroom cap with the garlic-mushroom mixture.
Place the stuffed mushrooms and cherry tomatoes onto the prepared baking sheet. Drizzle them with the remaining 1 tablespoon of olive oil.
Bake in the preheated oven for 8-10 minutes, or until the mushrooms are tender and the cheese is slightly golden.
Remove from the oven and let cool for a few minutes. If desired, sprinkle with freshly chopped parsley for garnish.
Serve warm and enjoy your Tomato Mushroom Appetizers!
