Press the tofu to remove excess water. Wrap the tofu in a clean kitchen towel and place a heavy weight on top for about 15 minutes. Once pressed, cut the tofu into 1-inch cubes.

Prepare the sauce: In a small bowl, whisk together soy sauce, water, cornstarch, brown sugar, sesame oil, white vinegar, minced garlic, grated ginger, and red pepper flakes (if using). Set aside.
