Roast the almonds in a preheated oven at 180°C (350°F) for 8-10 minutes, or until golden. Allow them to cool and then chop them coarsely.

Prepare the nougat by combining the honey and sugar in a small saucepan over medium heat. Stir constantly until the sugar dissolves and the mixture becomes smooth.

In a clean, grease-free bowl, whisk the egg white until stiff peaks form. Slowly pour the hot honey-sugar mixture into the egg white while whisking continuously until fully incorporated and fluffy. Stir in the chopped almonds and set the nougat aside to cool.
