📝 Instructions

9 steps
1

Preheat your oven to 220°C (425°F). Line two baking sheets with parchment paper.

2

In a medium saucepan, combine the water, unsalted butter, and salt. Heat over medium heat until the butter is melted and the mixture begins to boil.

3

Reduce the heat to low and add the flour all at once. Stir vigorously with a wooden spoon until the dough comes together in a ball and pulls away from the sides of the pan, about 1-2 minutes.

4

Remove the saucepan from the heat and let the dough cool for 2-3 minutes. This will prevent the eggs from cooking when added.

5

Add the eggs one at a time, stirring well after each addition. The dough will look lumpy at first, but will smooth out as you mix. Stir until the dough is glossy and thick.

6

Fold in the grated Gruyère cheese, chopped thyme, and ground black pepper until well combined.

7

Using a spoon or a piping bag fitted with a plain round tip, drop or pipe tablespoon-sized mounds of dough onto the prepared baking sheets, spacing them about 5 cm (2 inches) apart.

8

Bake in the preheated oven for 10 minutes at 220°C (425°F), then reduce the temperature to 190°C (375°F) and bake for an additional 15 minutes, or until the gougeres are golden brown and puffed.

9

Remove the gougeres from the oven and let them cool slightly on a wire rack. Serve warm or at room temperature.
