  • 1 tsp Ground coriander
  • 0.5 tsp Turmeric powder

  • 400 g Crushed tomatoes
  • 200 ml Coconut milk
  • 400 g Cooked chickpeas
  • 1 tsp Salt
  • 100 g Fresh spinach
  • 2 tbsp Fresh cilantro

Peel and quarter the onion, peel the garlic cloves, and slice the ginger into small pieces.

Add the onion, garlic, and ginger into the Thermomix bowl. Chop for 5 seconds on Speed 5. Scrape down the sides of the bowl.

Add the olive oil to the Thermomix bowl. Sauté for 3 minutes at 120°C on Speed 1.

Add the ground cumin, ground coriander, turmeric powder, and paprika. Cook for 1 minute at 100°C on Speed 1 to toast the spices.

Pour in the crushed tomatoes and coconut milk. Blend for 10 seconds on Speed 5 to create a smooth curry base.

Add the cooked chickpeas and salt. Cook for 15 minutes at 100°C on Reverse Speed Soft (or Gentle Stir) to combine flavors.
