Cook for 2–3 minutes, or until the bottoms are golden brown.

Carefully pour in 1/4 cup of water and immediately cover the pan with a lid. Reduce heat to medium and steam for 5–6 minutes, until the water has mostly evaporated.

When the water has evaporated, remove the lid and let the gyoza cook for another 1–2 minutes to crisp up the bottoms again. Remove from pan and repeat with remaining gyoza.

To make the dipping sauce, combine soy sauce, rice vinegar, and chili oil (if using) in a small bowl.
