📝 Instructions

8 steps
1

Cut the tops off the tomatoes and use a small spoon to carefully scoop out the flesh and seeds. Set the hollowed tomatoes upside down on a plate lined with paper towels to drain while preparing the filling.

2

Place the bulgur wheat in a bowl and pour the boiling water over it. Cover the bowl and let it sit for 15 minutes, or until the bulgur is tender and has absorbed all the water. Fluff with a fork to break up the grains.

3

In a large mixing bowl, combine the chopped parsley, mint, green onions, and diced cucumber.

4

Add the softened bulgur to the bowl with the vegetables, and gently mix to combine.

5

Drizzle the olive oil and lemon juice over the mixture. Add the salt and black pepper, and toss everything together until well combined.

6

Taste the tabbouleh and adjust the seasoning with more salt, pepper, or lemon juice if needed.

7

Gently pat the inside of the tomatoes dry. Spoon the tabbouleh mixture into each tomato, filling them generously.

8

Arrange the stuffed tomatoes on a serving platter and garnish with additional parsley or mint if desired. Serve immediately or refrigerate for up to 2 hours before serving.
