📝 Instructions

10 steps
1

In a small bowl, mix the warm water, active dry yeast, and sugar together. Let the mixture sit for 5-10 minutes until it becomes foamy, indicating the yeast is active.

2

In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and pour in the yeast mixture and 2 tablespoons of olive oil.

3

Mix the ingredients together until a shaggy dough forms. Turn the dough onto a floured surface and knead for about 8-10 minutes, or until the dough is smooth and elastic. If the dough is sticky, add a little flour, a tablespoon at a time.

4

Lightly grease a clean bowl with olive oil. Place the dough in the bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 hour, or until it doubles in size.

5

Once the dough has risen, punch it down to release the air. Divide the dough into 6 equal portions and shape each into a ball. Let the dough balls rest for 10 minutes.

6

Preheat your oven to 220°C (430°F) and place a baking sheet or pizza stone inside to heat up.

7

On a floured surface, roll each dough ball into a thin round, about 20 cm (8 inches) in diameter.

8

In a small bowl, mix the za'atar spice blend and 4 tablespoons of olive oil into a paste. Spread a generous amount of this mixture evenly over each dough round, leaving a small border around the edges.

9

Carefully transfer the prepared dough rounds onto the preheated baking sheet or pizza stone. Bake for 7-10 minutes, or until the edges are golden and the bread is cooked through.

10

Remove the Manoushi from the oven and let it cool slightly before serving. Enjoy warm, either plain or with additional toppings such as fresh vegetables or cheese.
