Preheat your oven to 375°F (190°C). Prepare a baking dish large enough to hold both trout and lightly grease the bottom with olive oil.
Rinse the trout under cold water and pat them dry with paper towels. Season the inside of each fish cavity with a pinch of salt and black pepper.
