Elevate your dessert game with this visually stunning Surprise Rainbow Pi Cake, a delightful treat that marries creativity with deliciousness! Perfect for mathematicians, birthday celebrations, or any special occasion, this layered masterpiece features vibrant rainbow colors, a soft cream cheese frosting, and a hidden "Pi" symbol at its core for a jaw-dropping surprise. Each moist, colorful layer is carefully tinted with food coloring to create a dazzling reveal when sliced, while the hidden Pi shape adds intrigue and charm. Whether you're celebrating Pi Day or simply want to wow your guests, this cake is a show-stopping blend of artistic flair and delectable flavor.
Preheat your oven to 350°F (175°C) and grease three 9-inch round cake pans.
In a medium bowl, combine the flour and baking powder. Mix well and set aside.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the eggs, one at a time, to the butter mixture, blending well after each addition.
Mix in the vanilla extract.
Gradually add the dry flour mixture to the wet ingredients, alternating with the milk. Begin and end with the flour mixture, mixing until just combined.
Divide the batter equally into 6 bowls. Use food coloring to tint each bowl a different color of the rainbow: red, orange, yellow, green, blue, and purple.
Pour each colored batter into a separate greased cake pan, layering two colors per pan to create a marbling effect if desired. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool completely before removing them from the pans.
Using one of the cooled layers (ideally the purple cake for a stunning contrast), trace and cut out the Pi-shaped design using the stencil. Carefully set the Pi-shaped piece aside.
Stack the cake layers, spreading a thin layer of cream cheese frosting between each layer, except for the top layer.
Cut out a section in the center of the stacked cake (excluding the top layer) to embed the Pi-shaped cake piece. Align the Pi piece inside and close the stack with the final cake layer.
For the frosting, beat softened cream cheese with powdered sugar until smooth. Add heavy cream and whip until fluffy.
Frost the outside of the cake, covering it completely. Decorate as desired, using excess frosting and any additional decorations to complement the rainbow theme.
Chill for 30 minutes to set the frosting before slicing. When served, each slice will reveal the colorful rainbow layers and the surprise Pi shape in the middle!
