Preheat your oven to 375°F (190°C).
Scrub and peel the russet potatoes. Place them in a pot of salted water and bring to a boil. Cook until just tender, but not falling apart, about 10-12 minutes.
Drain the potatoes and allow them to cool completely. Once cooled, grate them using the large holes of a cheese grater and set aside.
In a large mixing bowl, combine the grated potatoes, 1 3/4 cups of shredded cheddar cheese, sour cream, grated onion, garlic powder, salt, and black pepper. Mix gently to ensure the potatoes do not break apart.
