Season the chuck roast generously on all sides with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat. Sear the roast for 2-3 minutes on each side to create a browned crust. Remove from the skillet and set aside.
Peel and chop the carrots into large chunks. Quarter the potatoes. Slice the onion into thick wedges. Mince the garlic cloves.
Place the carrots, potatoes, and onions in the bottom of the slow cooker. Sprinkle the minced garlic over the vegetables.
Lay the seared roast on top of the vegetables in the slow cooker.
In a small bowl, whisk together the beef broth, Worcestershire sauce, dried rosemary, and dried thyme. Pour the mixture over the roast and vegetables.
Cover the slow cooker with its lid and set it to cook on LOW for 8 hours, or on HIGH for 4-5 hours, until the roast is fork-tender and the vegetables are cooked through.
Once done, carefully remove the roast and vegetables from the slow cooker. Slice the roast and serve with the vegetables on the side, drizzled with the juices from the slow cooker.
