Indulge in the rich, creamy flavors of Sugar-Free Traditional Indian Kulfi, a guilt-free twist on the iconic frozen dessert. Made with whole milk and heavy cream, this kulfi is simmered to perfection, creating a luxuriously thick and creamy base without compromising on authenticity. Sweetened naturally with stevia or erythritol, itβs a diabetic-friendly option that doesn't skimp on taste. Notes of aromatic cardamom, nutty almond flour, and fragrant rose water complement the satisfying crunch of crushed pistachios, offering a heavenly combination of textures and flavors in every bite. Perfect for summer and packed with traditional Indian flair, this sugar-free kulfi is a delightful treat thatβs as wholesome as it is irresistible!
Pour the whole milk and heavy cream into a heavy-bottomed pan.
Bring the mixture to a boil over medium heat, stirring frequently to prevent it from sticking to the bottom.
Once boiling, lower the heat to medium-low and allow the milk to simmer. Continue stirring occasionally and scrape the sides of the pan to incorporate the milk solids back into the mixture.
After about 60 minutes, the milk will reduce to half its original quantity and thicken to a creamy consistency. This is the base for the kulfi.
Add the almond flour to the reduced milk and mix well to enhance the nutty flavor and texture of the kulfi.
Stir in the cardamom powder and simmer for another 5 minutes, ensuring it's fully mixed.
Remove the pan from heat and allow the mixture to cool slightly for about 10 minutes.
Once cooled slightly, add the stevia or erythritol and rose water, stirring well to evenly incorporate the sweetener.
Mix in the crushed pistachios, reserving a small amount for garnishing if desired.
Pour the mixture into kulfi molds or small freezer-safe containers, ensuring they are filled evenly.
Cover the molds with lids or aluminum foil, and freeze for at least 6-8 hours or until fully set.
To serve, run the outside of the kulfi molds under warm water for a few seconds to loosen, then gently remove the kulfi. Garnish with reserved pistachios and enjoy!
