Preheat the oven to 180°C (350°F).
Prepare the crust: In a mixing bowl, combine the whole wheat flour and a pinch of salt. Add the cold butter, cut into small cubes, and use your fingertips to rub the butter into the flour until the mixture resembles coarse crumbs.
Gradually add ice water, one tablespoon at a time, and mix until the dough comes together. Form it into a ball, wrap in plastic wrap, and refrigerate for 20 minutes.
While the dough chills, prepare the apple compote: Peel, core, and dice 3 apples. Add them to a saucepan with 2 tablespoons of water, the lemon juice, and 1/2 teaspoon of ground cinnamon. Cook over medium heat until the apples are soft and mashable, about 10 minutes. Mash into a smooth compote and set aside to cool.
Slice the remaining 3 apples into thin, even slices (about 1/8 inch thick). Set them aside for the topping.
Roll out the chilled dough on a lightly floured surface into a circle about 10 inches in diameter. Transfer it to a 9-inch tart pan, pressing it gently into the edges. Trim any overhang.
Spread the apple compote evenly over the bottom of the tart shell.
Arrange the apple slices in a circular, overlapping pattern on top of the compote, starting from the outer edge and working inward. Sprinkle the remaining 1/2 teaspoon of cinnamon over the top.
Bake the tart in the preheated oven for 40-45 minutes, or until the crust is golden and the apples are tender.
Remove from the oven and let cool for at least 10 minutes before serving. Optionally, you can brush the top with a little unsweetened apple juice for a glossy finish.
Serve warm or at room temperature. Enjoy your sugar-free Tarte aux Pommes!
