Wash the tomatoes thoroughly and chop them into small pieces.
Peel the ginger and garlic, and finely chop them. Chop the green chilies as well.
Heat the vegetable oil in a pan over medium heat. Add the cumin seeds, mustard seeds, and asafoetida, and let them sputter for a few seconds.
Add the curry leaves, chopped ginger, garlic, and green chilies. SautΓ© for 1-2 minutes until aromatic.
Stir in the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook for about 10 minutes, stirring occasionally, until the tomatoes soften and begin to break down.
