Wash and hull the strawberries to remove the green tops.
In a blender, combine the fresh strawberries, plain unsweetened kefir, vanilla extract, and maple syrup or honey (if using). Adjust the amount of sweetener based on the natural sweetness of the strawberries and your taste preference.
Blend the mixture on high until smooth and creamy.
Pour the mixture evenly into popsicle molds, leaving a small gap at the top to allow for expansion during freezing.
Insert popsicle sticks into the molds. If your mold does not hold the sticks in place, freeze the mixture for about 1 hour first, then insert the sticks when the mixture is firm enough to support them.
Freeze the popsicles for at least 4-6 hours, or until completely solid.
To remove the popsicles from the molds, run warm water over the outside of the molds for 10-15 seconds to loosen them.
Enjoy immediately or store the popsicles in a freezer-safe container for up to 2 weeks.
