Preheat the oven to 400°F (200°C).
Cut each acorn squash in half lengthwise and scoop out the seeds.
Brush the flesh of the squash halves with 1 tablespoon of olive oil and season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
Place the squash halves cut-side down on a baking sheet. Roast for 30 minutes or until the flesh is tender when pierced with a fork.
