Discover the wholesome and flavorful delight of Sugar-Free Sabudana Khichadi, a gluten-free and vegetarian recipe that's perfect for fasting days or a light, nutritious meal. Made with tender, soaked sabudana (tapioca pearls), crunchy roasted peanuts, golden sautéed potatoes, and aromatic spices like cumin and curry leaves, this dish is a beautiful blend of textures and flavors. The zing of fresh lemon juice and a garnish of vibrant coriander complete this satisfying, no-sugar recipe. Easy to prepare in just 15 minutes of cook time, this versatile dish can be customized with ghee for richness or vegan-friendly oil. It's a comforting, quick, and naturally sweet-free option for health-conscious food lovers.
Rinse the sabudana under cold water until the water runs clear to remove excess starch. Soak the sabudana in water just covering the pearls for 4-5 hours or overnight.
Drain any excess water from the soaked sabudana. Ensure they are soft by pressing between fingers. Transfer them to a mixing bowl.
Roughly crush the roasted peanuts in a food processor or using a pestle and mortar, and mix them with the sabudana.
Peel and dice the potato into small cubes.
Heat ghee in a pan on medium heat. Add cumin seeds and let them sizzle.
Add chopped green chilies and curry leaves. Sauté for a minute until fragrant.
Add the diced potato cubes and sauté until they are cooked and slightly golden, approximately 7-8 minutes.
Add the sabudana-peanut mixture to the pan along with salt.
Mix gently and cook on low heat, stirring occasionally, until the sabudana is translucent (about 3-4 minutes).
Turn off the heat and stir in the lemon juice. Adjust salt if necessary.
Garnish with fresh coriander leaves before serving warm.
