Rinse the chana dal thoroughly under running water and soak it for 1 hour.
Drain the water and pressure cook the chana dal with 2 cups of water for about 3-4 whistles until it becomes soft. Allow the pressure to release naturally.
Drain the cooked dal well and mash it using a potato masher or by blending it to form a smooth paste.
In a non-stick pan, heat the mashed chana dal on a medium flame, add stevia or erythritol, and stir continuously for about 10 minutes until the mixture thickens and leaves the sides of the pan.
Add cardamom and nutmeg powder. Mix well and keep aside the puran mixture to cool.
In a mixing bowl, combine whole wheat flour, turmeric powder, salt, and 1 tablespoon of ghee. Mix thoroughly.
Gradually add warm water into the flour mixture while kneading to form a soft and smooth dough. Cover it with a damp cloth and let it rest for 30 minutes.
Divide both the puran mixture and the dough into equal portions (about 8 each).
Roll out a portion of the dough into a small circle using a rolling pin, flatten a portion of the puran mixture and place it in the center of the rolled dough.
Fold and bring together the edges of the dough to form a ball and roll gently into a disc about 6 inches in diameter.
Heat a non-stick tava or griddle on medium flame. Cook the rolled puran poli on both sides, applying ghee to each side until golden brown.
Repeat the process for the remaining dough and puran mixture.
Serve sugar-free puran poli warm with some additional ghee spread on top if desired.
