Rinse the sushi rice under cold water until the water runs clear, then combine it with 1.5 cups of water in a rice cooker or saucepan.
Cook the rice according to your rice cooker instructions or simmer on the stove with the lid tightly covered for about 20 minutes, until all the water is absorbed.
Once cooked, transfer the rice to a large bowl and gently stir in rice vinegar and salt. Let it cool to room temperature.
While the rice is cooling, prepare the fillings: slice the salmon into thin strips, julienne the cucumber and avocado, and peel and segment the orange.
