Grease an 8-inch square pan with a little ghee and set aside.
In a heavy-bottomed pan, melt ghee over low heat.
In a separate bowl, sift 1 cup of gram flour to remove any lumps.
Slowly add the sifted gram flour to the melted ghee, stirring constantly over low-medium heat. Roast for about 3-4 minutes until the mixture turns aromatic and slightly darkens in color.
In another pan, add 1/2 cup of water and bring it to a boil. Once boiling, add 3/4 cup of powdered stevia and stir until it completely dissolves.
Gradually add the stevia syrup to the gram flour and ghee mixture, stirring continuously to avoid lump formation.
Add 1/2 teaspoon of cardamom powder and a pinch of baking soda, mix well. Keep cooking and stirring over medium heat.
As the mixture thickens, it will start to leave the sides of the pan. This should take about 8-10 minutes. At this stage, the mixture will become porous and start to ooze ghee.
Pour the mixture into the prepared greased pan. Smooth the top with a spatula.
Garnish with slivered almonds or pistachios if desired.
Allow it to cool for about 15 minutes, then cut into squares or diamonds.
Let it cool completely before transferring to an airtight container for storage.
